Potential evaluation of selenium content (Se) in ipomoea potatoes for later use as an antioxidant mineral source (2018)

- Abstract: Selenium (Se) is provoking in world research, due to its double status, as an essential nutrient and as a toxic element when ingested in high concentrations. Most of the ingested by animals and humans comes from the soil, where plants and vegetables that absorb this element are grown. The concentration of Se in edible plants is determined by the phytoavailability of Se in the soils. The sweet potato (Ipomea potatoes), world-grown vegetables is the object of this study, because it is important to identify this element, essential in nutritional terms as in toxic terms. Therefore, the present study has the objective of analyzing seed and root contents of three different sweet potato genotypes, and the crop is widely cultivated in the Northwest Region of Rio Grande do Sul (Brazil). Two procedures of sample opening by wet (royal water and nitroperchloric mixture) were evaluated. The samples come from family farming properties, in a total of 95 samples between branch and root. The determination of the contents of If were quantified in Optical Emission Spectrometer with Inductively Coupled Plasma (ICP-OES) model Optima DV 4300 of Perkin Elmer, with the possibility of using the plasma in the axial and radial configuration mode. The instrumental conditions were pre-optimized prior to determination. By means of quantification, it can be observed that the content of Se in shoot and root of sweet potato are similar, presenting concentrations of 3.1 +/- 0.6 mg If kg-1 and 3.6 +/- 0.4 mg If kg-1, respectively for digestion through royal water, and for nitroperchloric digestion, the values of 2.9 +/- 0.3 mg were kg -1 and 3.6 +/- 0 , 6 mg If kg-1, for aerial part and root. According to White's classification (2015), plants that accumulate <100 mg If kg-1, already considered accumulating and hyper-accumulating, accumulate concentrations of Se> 100 mg If kg-1 and 1000-15000, respectively.Thus, according to the presented contents, the sweet potato fits as a non-accumulating Se plant. Observing the digestion methodologies for root, a t-value of 0.000166192 was tested through the t-test, and for the F-test a p value of 0.1817687. The aerial part digestion methodologies were obtained for the t-test, a p-value of 0.01495403, and for the F-test a p-value of 0.09661218. Thus, the study showed that, regardless of the method of digestion chosen, the values of If did not present statistical differences, compared to the opening procedure in both parts of the vegetable, when comparing by inter-laboratorial analysis, did not show statistical differences according to test and test-F. It is of considerable interest to understand how plants acquire and accumulate Se, since the biofortification of Se in easy-to-grow edible crops such as sweet potatoes, which offers greater accessibility compared to Brazil nuts richer in If recognized world-wide and of less expressive cultivation, can solve the shortage of If in the human diet.
