Production of fermentable sugar from cassava peels by enzymatic hydrolysis (2019)

- Abstract: In the present work, cassava peels obtained from different peeling processes (manual or mechanical) were used as feedstock for production of fermentable sugars by enzymatic hydrolysis. The hydrolysis conditions were based on the method used for determination of total starch content in cereals adapted for 14% solids. The results showed that the starch content varied according to cassava peels processing being the highest value (70%) obtained from cassava manual peeling. In relation to hydrolysis yield, cassava peel from mechanically processing showed superior results (72%) in relation to manual peeling (55%) and the hydrolysates presented glucose values of 34 and 62 g/L, respectively. Thus, cassava peels can be considered as a potential feedstock to producing fermentable sugar to be used in bioprocesses to obtain different products.
