- Abstract: Beta-glucan is a water-soluble polymer of glucose units linked with β-glycosidic bonds having β (1 → 3) and β (1 → 6) linkages. Naturally, beta-glucan is present in cereals such as oat bran but also produced by bacteria, fungi, and lichens. To cater to the commercial demand of beta-glucan, it can be produced by microbial fermentation by microorganisms such as Lasiodiplodia theobromae, Botryosphaeria rhodina, Ganoderma lucidum, among others. Beta glucan inherently has a diverse range of commercial applications primarily in nutraceutical sector, food, and health care. Generally, microorganisms secrete beta-glucan as exopolysaccharides (EPS) in the form of capsule or slime. Due to the myriad of healthcare benefits, beta glucan is getting significant attention in society and efforts are underway for the scale up of microbial production. This chapter critically summarizes the recent information on fermentative production of beta glucan, strain improvement, properties, applications, and commercial potential of this carbohydrate polymer.
